Made in a low-intervention style, the fruit ferments spontaneously and soaks on skins for 2 weeks before pressing; to ensure purity and concentration, only free-run juice is used. The result is a an elegant, perfumed red with distinctly Mediterranean flavour profile.

Tasting notes/pairing options: Light ruby in the glass, the nose is elegantly perfumed. The wine gives rich flavours of cherry, strawberry and spicy liquorice as well as more smoky, earthy notes. Refreshing on the palate, with gentle tannins and a long attractive finish.

The vineyard/the winemaking:
A small north-facing vineyard in Pteri plateau. The vines are bushvines with an average age of 36 years old. Dry-grown and cultivated on clay soils, yields are low with high quality fruit. The climate here is cool and the temperatures in the vineyard are moderated by proximity to the Mediterranean ocean and its altitude of 850m.The grapes are handpicked and crushed. Fermentation is spontaneous, followed by 2 weeks on skins before pressing; only the free run juice is used. The wine ages in 5000l oak tanks for 5 months. The wine is then bottled unfiltered and unfined with minimal sulphur use.
We are a close family business and are currently in our second generation. We are based on our natural lavender farm, Yorkshire Lavender in the North Yorkshire countryside.
