The vineyard/the winemaking:
Grapes are sourced from Payten & Jones vineyards in a warmer part of the Yarra Valley. It receives most rainfall in the winter and spring, and has relatively cool, dry and humid summers. There is limited maritime influence. Vines are 30 years old and unirrigated. Grapes are mostly de-stemmed and fermented with little extraction. A small percentage was kept whole bunch and blended in in afterwards, before resting in old oak hogsheads. Wines are bottled without fining or filtration and with just a small addition of SO2.
We are a close family business and are currently in our second generation. We are based on our natural lavender farm, Yorkshire Lavender in the North Yorkshire countryside.

With a member of our staff, Timi, a trained sommelier; it seemed crazy to let that enthusiasm and experience go to waste.
Wine starts in the ground! Just like lavender the correct soil, conditions and care are vital to grow excellent grapes to make exceptional wine.
